Refried Beans, Below

Flour Tortillas, *

lettuce, shredded

Tomatoes, Chopped, 2 Medium

Cheddar Cheese, Shredded
Refried beans

Lard Or Vegetable Oil

Pinto Beans, Cooked
2
tbsp
Chile Powder
1
tbsp
Cumin, ground
1
teasp
Salt
1/8
teasp
Pepper
 
Procedure
 
1. * tortillas should be 10-inches in diameter and warmed.
2. ~--------------------------------------------------------------------- ~-- heat beef and refried beans separately.
3. Place about ¼ cup of the beef on the center of each tortilla.
4. Spoon about 2 t of the beans onto the beef.
5. Top with ¼ cup of the lettuce and about 2 t each of tomatoes and cheese.
6. Fold one end of the tortilla up about 1 inch over filling; fold right and left sides over folded end, overlapping.
7. Fold down remaining end, and serve.
8. Refried beans: heat lard in 10-inch skillet over medium heat until hot.
9. Add pinto beans; cook for 5 minutes, stirring occasionally.
10. Mash beans; stir in remaining ingredients.
11. Add oil to skillet if necessary; cook and stir until smooth paste forms, about 5 minutes.
12. Garnish with shredded cheese, if desired
