Ingredients
Makes servings
  • 2 cup Sugar, granulated
  • 4 -- Egg, whole
  • 1.5 cup Oil
  • 2 cup Flour
  • 1 tsp Cinnamon
  • 1 tsp Salt
  • 2 tsp Soda
  • 3 cup grated carrots
  • 2 tsp Vanilla
  • 4 tbsp Chopped Oregon hazelnuts
  • 8 tbsp Butter
  • 4 oz Cream cheese
  • 2 cup Sugar, powdered
  • 8 tbsp Chopped Oregon hazelnuts
  • 1 tsp Vanilla
Preparation
Beat eggs, sugar and oil together.
Sift flour, cinnamon, soda and salt together.
Add to creamed mixture.
Fold in grated carrots and vanilla and mix well.
Bake at 325 for 1 hour in a greased 9x13-inch pan.
Spread on the cream cheese icing and serve.
