Ingredients
Makes servings
  • 6 oz Marinated artichoke hearts
  • asdfasdf2 -Undrained
  • 4 cup Cooked spaghetti squash
  • 1 asdfasdf2 Zucchini, cut into thin
  • asdfasdf2 -strips
  • 1 asdfasdf2 Carrot, scraped and cut into
  • asdfasdf2 -thin strips
  • 0.67 tbsp chopped sweet red pepper
  • 4 oz shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese
  • 0.25 tbsp rice vinegar
  • 1 tbsp Dry mustard
  • 1 tbsp Chopped fresh oregano
  • 1 tbsp Chopped fresh basil
  • 1 tbsp Chopped fresh parsley
  • 1 tbsp Chopped onion
  • 1 tbsp Capers, drained and crushed
  • 2 tbsp Vegetable oil
  • 2 tbsp Red Wine Vinegar
  • 1 teasp dry white wine (optional)
  • 1 asdfasdf2 Clove Garlic, Minced
Preparation
Drain artichokes, reserving marinade, coarsely chop artichokes combine artichokes, spaghetti squash, and next 5 ingredients in a large bowl, set aside.
Combine reserved marinade, rice vinegar, and remaining ingredients in a jar.
Cover tightly, and shake vigorously.
Pour over vegetables.
Cover and chill 8 hours
